Start with some modernist ingredients like liquid nitrogen or sodium alginate (that creates “caviar”), add an extra-long ingredient list that looks like it belongs in a chemistry lab book instead of the kitchen, throw in some equipment that many chefs don’t even have at home yet, and there are are. I hope this hasn’t scared you off yet. Grilled food doesn’t always need to consist of meat, fish or vegetables. These are just the standard ingredients that you can manipulate into modern dishes. The objective of this article is to provide inspiration for grill-based dishes beyond the usual meat, fish and veggies.
One of my favorite ingredients that can be used to make delicious modernist dishes is agar. Agar (the same stuff that is in the little paper-like sheets) is derived from seaweed and has many interesting properties. It will gel pretty much any liquid it comes into contact with, but only above 40C/104F (depending on the concentration). This means you can pour a liquid such as fruit juice or even oil (yes, I said oil!) onto an agar surface and solidify it! You can then slice off pieces of this “ice” and serve them right away on a plate. Agar will also melt when heated, which means if you insert some sort of treat inside the ice cube before you pour it, you can create a cool looking effect where the outside of the ice “melts” away to reveal your surprise inside!
One example is to create an agar ice ball and fill it with fruit juice. When you heat up the ball, it will melt away, revealing chunks of fruit inside. This will give your guests a great visual impact while also tasting delicious! You can also make this recipe even more impressive by cutting the finished capsules in half after they are done setting. Doing this shows off both layers of flavor at once because you get to see the fruit on top as well as the juice below! To make these ice balls I start out by dissolving some agar in boiling water to form a thin liquid that won’t set when added to cold liquids.
Can I grill inside my garage? For each ice ball I place one large drop of this solution onto my non-stick silicon mat and spread it out with a spoon so that it forms a circle. I then let this set in the freezer for about 15 minutes to get rid of any bubbles. This step is very important! Without doing this you are likely to end up with some sort of foam instead of an ice ball.
To make the agar gel for this recipe I use 50g (1/4 cup) of Certo Pectin, 10g (2 tsp) of sugar, 2g (1/2 tsp) xanthan gum and 16g (0.6 fluid ounces) distilled water. I mix all these ingredients together until they are well combined and pour them onto my silicon mat on top of the previously frozen agar layer. I let this set in the freezer for another 15 minutes.
After the gel is done setting, I dip my silicon mat right side up into a bowl of boiling water to melt away any agar that didn’t pour out before. Then I take it back out and flip it over to start cutting circles into my gel layer. For each ice ball I cut four 0.5 inch (1 cm) circular pieces with a cookie cutter. To make sure they are all at least slightly different sizes so people can see inside them better, I usually use an asymmetric flower-like shape as one circle. The other three are usually just round disks though! After you’ve cut all your circles, place them onto plastic wrap so they don’t stick to anything and put them back in the freezer for at least another 30 minutes.
Once your agar pieces are frozen, remove them from the freezer and take some fruit juice or other liquid you want to fill your ice ball with (I used passionfruit and mango juices). Using a dropper, pour drops of this juice onto one of the circular pieces of frozen gel. Make sure all four circles get “painted” so that every piece has an even amount of juice on it! Put all these pieces back into the freezer while you clean up. Once they’re done freezing, pick up each piece and wrap a thin strip of plastic wrap around it so it’s completely covered by the wrap. You can then place all your wrapped pieces back into the freezer while you melt some chocolate for dipping them in.
For this recipe I used the following ingredients: 1/2 cup cream, 3 tbsp sugar, pinch of salt, 2 ounces dark chocolate and 4 tsp coconut oil. First I put the cream, sugar and salt into a saucepan over medium heat to make a simple syrup. In a separate container I mix together my dark chocolate and coconut oil until smooth and pourable. Once my sugar is dissolved and syrupy, I take it off the stove and quickly add in my melted chocolate mixture with constant stirring so that it stays fluid but doesn’t seize or harden up too much. If your sauce turns out lumpy that’s okay! Just keep stirring until it smooths out.
Can I grill inside my garage? Now it’s time to start dipping! I place the wrapped fruit capsules on a plate one at a time and carefully pick them up with my fingers to dip into my chocolate sauce. This is where things can get pretty messy, so make sure you don’t plan on wearing anything nice while making these. Once each piece is covered in chocolate I put it back onto my silicon mat and let any excess drip off before putting it back in the freezer for another 30 minutes or so. After they are cold they are ready to serve! You can see from all the pictures that this method of freezing produces ice balls with very thin layers due to the small amount of agar used here. If you want thicker, try using double or even triple the amount of agar.
